Mediterranean Chicken Quesadillas

Ingredients

  • 1/2 pound cooked chicken or turkey (from the deli) (about 1 cup cut up)
  • 3 roma (plum) tomatoes
  • 4 flour tortillas (8 to 10 inches in diameter)
  • 1/4 cup soft cream cheese with roasted garlic (from 8-ounce tub)
  • 1 cup shredded mozzarella cheese (4 ounces)
  • 1/2 cup crumbled feta cheese (2 ounces)
  • Chopped fresh cilantro or parsley, if desired
  • Sliced ripe olives, if desired
  • Sliced jalapeño chili, if desired
  • Salsa, if desired

Directions

    Heat the oven to 450° F. Cut chicken into 1/2-inch pieces; chop tomatoes.

    Place 2 tortillas on the ungreased cookie sheet. Spread about 2 tablespoons of the cream cheese over each tortilla. Top with chicken, tomatoes, mozzarella cheese and feta cheese. Top with the 2 remaining tortillas.

    Bake about 5 minutes or just until the cheese is melted.

    To serve, cut each quesadilla into 8 wedges. Sprinkle with cilantro. Garnish each wedge with an olive or jalapeño chili slice, using a toothpick to hold the olive or chili in place. Serve with salsa.

    Cookie sheet or large shallow baking pan (about 15x10 inches).

    If you can't find roasted garlic cream cheese, use 1/4 cup regular cream cheese at room temperature, and stir in 1/4 teaspoon garlic powder.

    If you buy cooked chicken pieces or cook your own chicken, you will need 2 or 3 chicken breast halves.

    • Selected image to copy • 8 1/2x11-inch sheets overhead transparency film (available at copy center or office supply store) • Blank cards or card stock • Adhesive tape 1. Photocopy an image onto transperency film.
