In my house, pancakes have been a staple for many years because my kids love them and this dish was always the special weekend breakfast. But these weren’t your run-of-the-mill pancakes since I was always trying to change up the recipe to keep them fun and interesting. I later discovered that if I had the mixture ready to go, the process would be much simpler. Besides, I could tailor it to my taste by adding lemon zest or poppy seeds. My favorite recipe has also turned into a great gift and I can promise you that everyone loves receiving these fun pancake mix jars. All they have to add is eggs, milk, butter and vanilla. What more could you ask for? The cooking process is the same as all other pancakes, but the flavors and textures are completely different. After this, you’ll fall in love with this delicious mixture. The best part is that you can make it at home and put them away in the cupboard to make delicious pancakes whenever you want.

Ingredients

Pancake mix 1:

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 tablespoons of cocoa
  • 1/2 cup dried cherries

Pancake mix 2:

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon lavender flowers
  • 1/4 cup toasted pecans, chopped

Pancake mix 3:

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons dark brown sugar
  • 2 tablespoons Lucuma flour
  • 1/4 cup dark chocolate, chopped

Pancakes:

  • 1 cup Bisquick™ Original Baking Mix
  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 teaspoon vanilla

Directions

    Pancake Mix 1, 2, 3: Combine the flour, salt and baking powder. Pour into 3 mason jars.

    Later, in the order of the recipes, add the rest of the ingredients. Close with the lid and stick a label on to identify each.

    If they are gifts, make a card with the recipe and directions.

    You can add a wooden spoon or another little decoration to make the jars prettier.

    Mini Pancakes: Combine all the ingredients in a large bowl until the mixture is lumpy.

    Heat a few drops of oil in a saucepan or griddle; spread it with a brush or paper towel.

    Use couple of large spoonful of mix to make the pancakes. When you see the surface bubbling, turn them and cook for one more minute.

    Transfer to a cooling rack and bring to room temperature.

    Serve with maple syrup, honey or make your own syrup using passion fruit or any other fruit.

    Add a tablespoon of cooked quinoa to the pancake mix to give them a different texture.

    Add or change the ingredients in the jar to your taste. Incorporate chopped almonds, poppy seeds, sesame seeds, etc.
