Expert Tips

Mangoes have a huge, flat seed that clings to the fruit. To remove the flesh from the seed, use a sharp knife to cut the fruit vertically, sliding the knife along the seed on one side. Repeat on the other side, which will give you 2 large pieces. Remove the peel and chop.

Directions

  • 1 To make Mango Puree, place mango, sugar and water in blender. Cover; blend on high speed until smooth. Makes about 1 1/2 cups.
  • 2 To make margarita, add 3 tablespoons of the mango puree, the tequila, orange-flavored liqueur, lime juice and torn basil leaves to cocktail shaker. Fill shaker with ice; cover and shake vigorously. Strain into cocktail glass filled with fresh ice; top with club soda. Garnish with mango or additional Thai basil leaves.
