Mango, Black Bean and Quinoa Salad

cup black beans, canned

cup fresh cilantro, chopped

tablespoons olive oil
Juice of 1/2 a lemon
Pepper to taste

Expert Tips

If you'd like to add a spicy kick, you can add a touch of jalapeño or serrano.

If you haven't tried quinoa, I recommend you do because it is an excellent source of nutrients and it's gluten free. This delicious mango, black bean and quinoa salad is super nutritious. A vegetarian meal that will surely satisfy!

Directions

  • 1 Rinse quinoa under water for 2-3 minutes or until the water looks clean. Place quinoa in medium size pot with 3/4 cups of salted water. Let boil, cover and reduce heat.
  • 2 Cook for 15-20 minutes or until water has been absorbed and quinoa is tender.
  • 3 Leave covered for 5 minutes and mix with a fork as you would do with rice.
  • 4 In a salad bowl, mix quinoa with mango, black beans, cilantro, olive oil and lemon. Season with salt and pepper. Serve.
