Ingredients

  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • 2/3 cup brown sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon nutmeg powder
  • 1/4 teaspoon cinnamon powder
  • 4 1/2 cups (about 4 medium) mango slices (1/2-inch thick)
  • 1 1/2 cups Cascadian Farm™ organic oats & honey granola
  • 1 cup sliced almonds
  • 1 tablespoon cold butter, cut into small chunks

Directions

    Preheat the oven to 350° F.
  • 2
    Gently roll out the pie crust on a floured surface and place it in an ungreased 9-inch glass pie plate. Press firmly against the sides and bottom of the plate. Fold the edges of the dough in a decorative manner and cover with 2-inch strips of aluminum foil to keep the edges from burning. Set aside.

    Combine the sugar, cornstarch, nutmeg, cinnamon and mango in a large bowl. Mix together until well incorporated.

    Pour the mango mixture over the pie crust.

    Add the canola and almonds evenly, and distribute the butter over the surface.

    Bake for 30-35 minutes, or until the filling sets and appears light golden brown.

    Let it cool on a rack and serve.

    If you can't find fresh mangoes, you can use canned mangoes. Just be sure to drain well prior to use.
