This dessert will be the star at any birthday party of special occasion. The magic happens in the oven where the mixture separate into two with a chocolate flan-like base and a delicious cake on top. Serve it cold or at room temperature. Goes very well with fruits when served as dessert.

Ingredients

  • 1/2 cup of butter
  • 2 1/2 cup of warm whole milk
  • 1 cup of flour
  • 1/2 cup of cocoa powder, no sugar
  • 4 eggs, room temperature
  • 4 drops of white vinegar
  • 1 3/4 cups of powdered sugar
  • 2 tablespoons of espresso or strong coffee, warm
  • 1 teaspoon of vanilla extract

Directions

    Preheat the oven to 325°F. Grease a 9x9-inch brownie mold.

    Melt the butter and let cool.

    Mix the flour and chocolate powder in a bowl with a mixer.

    Separate the eggs and whip the whites with the vinegar until firm peaks are formed.

    Whip the yolks and sugar in another bowl until creamy, about 2 minutes. Add the vanilla extract, warm milk and melted butter. Stir until well combined.

    Add the flour and chocolate powder mixture, stir and add the warm milk mixture until you have a consistent and fluid mixture.

    Incorporate the whipped egg whites 1/3 at a time using a whisk.

    Pour the mixture into the mold and bake for 35-40 minutes. The middle might move a bit, but a toothpick will come out clean when inserted.

    Let cool completely before cutting and serving.
