Who doesn’t love macaroni and cheese? It’s creamy, has a delicious homemade flavor and it’s super easy to make. This Mexican style macaroni and cheese is no exception. Ingredients

  • 8 oz Mexican chorizo
  • 6 cups water
  • 8 oz elbow or shell macaroni, uncooked
  • 1 teaspoon salt
  • 3/4 cup milk
  • 3/4 cup crema mexicana or sour cream
  • 1 chipotle chili in adobo
  • 3 tablespoons butter
  • 1-1/2 cups grated cheddar cheese

Directions

    Sauté the chorizo in a nonstick frying pan on medium heat, until it’s completely cooked. Remove from heat and let cool.

    Boil the 6 cups of water on a medium-sized pot on high heat. Add pasta and salt. Reduce heat to medium and cook pasta for 8-10 minutes or until it’s al dente. Remove from heat and strain carefully.

    Blend milk and crema mexicana with the chipotle chili until everything is completely processed. Melt butter in a pot on medium-low heat. Pour milk mixture over butter and add cheese, stir until the cheese melts. Season to taste. Add cook pasta and chorizo, and stir until everything is well combined.
