Papaya, vanilla ice cream and crème de cassis come together in a Brazilian dessert. What's not to love?

Ingredients

  • 1 medium papaya (2 to 3 lb), peeled, seeded and chopped (4 cups)
  • 3 cups vanilla ice cream
  • 1/4 cup crème de cassis liqueur
  • 2 tablespoons dried black currants (zante currants), if desired

Directions

    In blender, place papaya and ice cream. Cover; blend on high speed 30 seconds to 1 minute or until well blended.

    In each of 8 dessert cups, place about 1/2 cup of the mixture. Stir 1 1/2 teaspoons liqueur and a few currants into each. Serve immediately.

Expert Tips

  • tip 1
    To make ahead, freeze the papaya and ice cream mixture. Just before serving, spoon into individual desset dishes and top with the liqueur and the currants.

    If desired, garnish each serving with mint leaves.
