Expert Tips

If you want, you can decorate the gelato with more ground cookies after serving and a few mint leaves to intensify the flavor.

Lemon gelato is one of my favorite desserts. It's refreshing taste and creamy texture make it the perfect addition to summer family reunions. It's even more delicious when combined with the classic vanilla cookies because they highlight the fresh lemon taste. I hope you enjoy this recipe as much as I do?

Directions

  • 1 Squeeze out the lemons until you have 2/3 cup of juice.
  • 2 Peel the lemons and wash the rinds to eliminate any remnants of juice. Place the rinds in a separate container.
  • 3 Place the egg yolks in a bowl and add 1 1/4 cup of cream, constantly whip.
  • 4 Heat 1 1/4 cup of sugar and 2 1/2 cup of half and half in a small pot of medium heat. Add the lemon rinds. Stir until the sugar has dissolved. Remove the mixture from the heat.
  • 5 Add approximately one tablespoon of the heat mixture to the egg yolk mixture. Then pour the yolk mixture into the hot mixture little by little.
  • 6 Cook over medium heat again until it thickens. It should be thick enough to cover the spoon.
  • 7 Remove the mixture form the heat and add 1/2 teaspoon of vanilla extract. Remove the lemon rinds. Refrigerate the mixture for one day or cool using the double boil method, but with ice instead of hot water. Once cold, add the lemon juice.
  • 8 Place the mixture in an ice cream make and follow the instructions of the machine. Once the mixture is soft you can add the ground cookies. Let freeze for 3 hours and it will be ready to serve.

Lemon gelato is one of my favorite desserts. It's refreshing taste and creamy texture make it the perfect addition to summer family reunions.
