Fresh fennel and chicken just seem to go together naturally—especially on the grill. it has a delicate, sweet flavor similar to anise but much more subtle. Look for fennel throughout the fall and spring months and use them either raw or cooked.

Ingredients

  • 6 bone-in chicken breasts (about 3 lb)
  • 1/3 cup olive or vegetable oil
  • 1 teaspoon grated lemon peel
  • 1/4 cup lemon juice
  • 2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
  • 1/2 teaspoon salt
  • 2 medium bulbs fennel, cut into 1/2-inch slices
  • 1 medium red onion, cut into 1/2-inch slices
  • Lemon slices, if desired
  • Fresh oregano sprigs, if desired

Directions

    Place chicken in shallow glass or plastic dish. In small bowl, mix oil, lemon peel, lemon juice, oregano and salt; pour over chicken. Cover and let stand 15 minutes.

    Heat coals or gas grill for direct heat (page 262). Remove chicken from marinade. Brush fennel and onion with marinade. Cover and grill chicken (skin sides down), fennel and onion over medium heat 20 to 25 minutes, turning once and brushing frequently with marinade, until juice of chicken is clear when thickest part is cut to bone (170°F). Discard any remaining marinade. Garnish chicken with lemon slices and oregano sprigs.

    For moist grilled chicken, use a pair of tongs instead of a fork to turn the pieces. A fork will pierce the flesh, letting too much of the juices run out and making the chicken drier.
