One of my biggest weaknesses is that I love food. That's why I have dedicated myself to learning about the world's gastronomy. As a suggestion accompany this delicious dish with rice or mashed potatoes.

Directions

  • 1 Preheat the oven to 375°F.
  • 2 Brush olive oil on lamb chops.
  • 3 In a small container combine thyme, oregano, rosemary, pepper and salt. Cover the lamb with this mix and let it stand to room temperature for about 10 minutes.
  • 4 Prepare mint pesto. Add all of the ingredients little by little in a food processor and mix them. Add the olive oil little by little until you get the desired consistency.
  • 5 Sear chops on a very hot grill for 2 or 3 minutes per side.
  • 6 Place lamb chops on baking tray; bake in oven for about 25 minutes. Lamb chops should be pink inside, not completely cooked.
  • 7 Before serving, brush with mint pesto on top.
  • 8 ¡Buen provecho!
