Expert Tips

If you prefer a dip that’s not spicy, you can prepare this recipe without the jalapeños. To garnish, use diced tomatoes and cilantro instead.

If you need an excuse to see your amigos, prepare this simple jalapeño and chorizo cheese dip and invite them over! I assure you they’ll love it. Queso fundido or choriqueso, is a melted cheese dip that originates from Mexico. Ideal for serving as an appetizer or special cocktail dish, I like to serve mine with tortilla chips. This jalapeño and chorizo cheese dip is the perfect combination of colors, textures and sabores for your table.

Directions

  • 1 Heat the oil in a skillet over medium heat and add the diced onion. Sauté for five to six minutes.
  • 2 Next, remove the skin from the chorizo before placing in the skillet. Continue cooking the mixture while using a fork to ‘break-up’ the pieces of chorizo. Then mix-in the chopped jalapeño.
  • 3 After two minutes have passed, stir in the cheese. Cook for an additional two minutes or until the cheese has melted. Transfer your finished dip to a serving dish and garnish with the jalapeño slices. Serve hot alongside your favorite tortilla chips.
