Jackfruit is a fruit grown in Asian countries like India, Nepal, Malaysia and Thailand. This fruit can also be found in the cuisines of Brazil and Jamaica, where you'll find recipes like syrup, jackfruit ice cream with avocado, crystallized jackfruit with sugar and many more. In my local market I get it frozen and other markets it can be found canned or fresh. The flesh color can vary from deep yellow to a very faint almost white yellow. Ingredients

  • 2 cups frozen jackfruit pulp
  • 1/2 cup lemon juice
  • 1/2 cup raw sugar
  • 5 cups cold water
  • 3 yellow lemons sliced
  • Ice, to taste

Directions

    To prepare this fresh water jackfruit you'll need a blender where you will add the pulp, lemon juice, sugar and two cups of water. Blend until the ingredients are well combined.

    Pour into a glass jar and add the rest of the water, stir with a long spoon and add the lemon slices and ice to taste.

    Serve in glass cups and garnish with lemon slices and colorful straws.
