For a spicier version, use bulk hot breakfast sausage.

Directions

  • 1 Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2 In 10-inch skillet, cook sausage, bell peppers and onions over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. In baking dish, mix sausage mixture, potatoes and 1 1/2 cups of the cheese.
  • 3 In medium bowl, stir Bisquick mix, milk, pepper and eggs with wire whisk or fork until blended. Pour into baking dish.
  • 4 Bake 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes. Sprinkle with parsley.
