Directions

  • 1 In a large pot, heat the vegetable oil to 350°F. The oil should be two to three inches high inside the pot.
  • 2 Separately in a medium-sized pot, combine the water, salt and one tablespoon of sugar over medium heat. After the first boil, incorporate the biscuit mix. Mix well with a wooden spoon until the dough has an even appearance. When ready, transfer to a bowl and let cool slightly.
  • 3 Next, dust a flat surface with a bit of flour. Place the dough over the surface and flatten with a rolling pin to about 1/4-inch in thickness.
  • 4 Then use a cookie cutter or the rim of a glass to cut out 10 to 12 circles. Fry each circle for three to five minutes or until golden. Let dry over some paper towels to remove any excess oil.
  • 5 In a small bowl, combine the cinnamon and sugar. When the cut-outs are ready, dust with a bit of the cinnamon mixture.
  • 6 To assemble, sandwich a small scoop of ice cream (around 1/2 cup) between two churro cookies. Repeat until all the cookies have been used.
  • 7 Serve immediately.
