You can pour all of the salsa in the bottom of the pepper, but for a more beautiful presentation you can also save some to pour on top around the edges of the egg.

As I love stuffed bell peppers, another classic dish, I decided to mix the two ideas to create a heartier meal. The result is a delicious stuffed bell pepper with a beautiful presentation. This recipe is incredibly easy and it is a fantastic way to start your day. You can even enjoy this as lunch or dinner. It is that awesome!

Directions

  • 1 Preheat oven to 400 ºF.
  • 2 Cut the tops of the bell peppers. Dice the tops so there is no waste and set bell pepper bottoms aside.
  • 3 In a pan, heat olive oil and sauté onions, celery, and diced bell pepper tops.
  • 4 Once onions, peppers, and celery are translucent, add garlic and keep sautéing until fragrant.
  • 5 Add Muir Glen™ fire roasted diced tomatoes and heat through, about 5 minutes.
  • 6 Season with salt and pepper to taste.
  • 7 Pour salsa over the bell pepper bottoms. Add an egg to each bell pepper on top of the salsa.
  • 8 Sprinkle the egg with salt and pepper to taste.
  • 9 Bake in the oven for 15 minutes or until egg whites set.
  • 10 Once out of the oven, sprinkle cilantro on top.
