In Mexico, tortas are a type of sandwich made with buns or bolillos. I’ve always believed that the best dishes can be turned into sandwiches, and huevos rancheros are no exception. This recipe means that huevos rancheros are no longer limited to breakfast. Enjoy a sandwich made with huevos rancheros for lunch or dinner.
