I love having breakfast at home on weekends because we like to turn it into brunch, this way I can prepare something different and delicious. Sometimes I prepare these delicious huevos rancheros. It's a dish I love for its color and texture. This time I used guacamole because I couldn't find ripe avocados, but you can if you find them. It's just as delicious!

Ingredients

  • 8 eggs
  • 8 corn tortillas
  • 1 small red onion, finely chopped
  • 1 jalapeño finely chopped
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 2 cups tomatoes cut into small cubes (use cherry)
  • 16 oz guacamole
  • Cilantro for garnish

Directions

  • 1
    You'll need a flat griddle to heat the tortillas and a pan to fry the eggs. Have the dishes or tray you'll use to serve ready.

    Heat the tortillas and set aside.
  • 3
    Sprinkle a pan with cooking spray, fry the eggs in batches of 2, place on the dishes when ready, add the rest of the ingredients and serve.

  • tip 1
    You can use 1 tablespoon of sunflower or vegetable oil, I didn't this time to cut calories.
  • tip 2
    I recommend using only 1 tablespoon of each ingredient when serving and just one egg per person.
