Directions

  • 1 For the dough:
  • 2 Preheat oven to 350 °F. Generously spray a muffin pan with non-stick cooking spray. Soak raisins in hot water for 5-8 minutes, until plump. Drain.
  • 3 In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg and cloves. In a separate bowl, whisk together oil, milk, eggs and sugar until smooth. Add to dry ingredients and whisk until smooth and stir in raisins.
  • 4 Fill muffin pan with batter and bake for 20 minutes or until a toothpick inserted comes out clean. Let cool while you prepare the icing.
  • 5 For the icing:
  • 6 In non-stick pan over low heat melt butter, marshmallows and milk; stirring until smooth. Add confectioner’s sugar, vanilla and salt; stir until smooth. Use a spoon to draw a cross on each muffin, serve.
