I love preparing cocktails to serve at home when we have friends and family over. I think that having a few drink recipes on hand is very useful because you never know when you're going to have a special guest, birthday party, reunion with friends, wedding or bachelorette party that requires a nice toast with a tasty, but simple cocktail. Ingredients

For the simple syrup:

  • 1 cup of sugar
  • 2 cups of water
  • 1/2 cup of mint leaves

For the cocktail:

  • 16 honeydew melon balls
  • 1/3 cup of lemon juice
  • 1/2 cup of white rum
  • 1 can of mineral water
  • 4 mint sprigs

Directions

  • 1
    Start by preparing the simple syrup. Add the sugar, water and mint to a small pot. Cook for 15 minutes while stirring constantly to help the sugar dissolve.

    Strain the syrup to remove the residue from the mint leaves and cool in the refrigerator for a few minutes.

    Use a melon baller to scoop out the balls of honeydew and freeze them to use as ice.
  • 4
    When you're ready to make the cocktails just add 4 melon balls per glass and then add 1 part rum, 2 parts simple syrup, the mineral water and decorate with one mint sprig per glass.
