I love preparing cocktails to serve at home when we have friends and family over. You can use cantaloupe instead of honeydew.

Directions

  • 1 Start by preparing the simple syrup. Add the sugar, water and mint to a small pot. Cook for 15 minutes while stirring constantly to help the sugar dissolve.
  • 2 Strain the syrup to remove the residue from the mint leaves and cool in the refrigerator for a few minutes.
  • 3 Use a melon baller to scoop out the balls of honeydew and freeze them to use as ice.
  • 4 When you're ready to make the cocktails just add 4 melon balls per glass and then add 1 part rum, 2 parts simple syrup, the mineral water and decorate with one mint sprig per glass.
