For me, nothing says “Happy Holidays” like a piece of homemade candy. With this easy mint bark recipe, you can spread a bit of holiday cheer with a homemade delight packed in a festive bag. I'm sure your friends and loved ones will enjoy this festive treat and might think you spent countless hours over a bubbly stovetop creating it. Little will they know that this minty recipe takes little to no time at all and can be easily doubled or tripled. It's a tasty and personal gift for teachers and neighbors or a wonderful dessert for that special holiday party.

Ingredients

  • 12 large candy canes
  • 1 lb white chocolate, coarsely chopped
  • 1 lb semisweet chocolate, coarsely chopped

Directions

  • 1
Line 2 baking sheets with parchment and set aside.
  • 2
Put the candy canes in a plastic bag and use a rolling pin or meat pounder to crush them into tiny pieces.
  • 3
Melt the white chocolate in a double boiler (a heatproof pan set over a pan of simmering water), stirring continuously.
  • 4
When the chocolate has completely melted, remove from heat and pour onto a lined baking sheet. With a spoon or offset spatula, spread the chocolate evenly.
  • 5
Sprinkle the chocolate with half of the crushed candy canes. Refrigerate until firm; about 20-30 minutes.
  • 6
Follow the same process with the semisweet chocolate.
  • 7
After your bark has cooled and is firm, remove from the refrigerator and break into pieces.
  • 8
Place in cellophane gift bags and tie with festive ribbons. Store in an airtight container and refrigerate for up to one week.

Expert Tips

  • tip 1
Melt half a pound of white and semisweet chocolate, spread evenly side by side on a baking sheet, and use a knife to create a marbled effect.
  • tip 2
You can substitute the candy canes with bits of toffee, nuts, or dried fruit, or a combination of each.
