Quinoa is a gluten-free grain that delivers a healthy dose of protein and fiber in each serving. Had you asked me a few months ago to make quinoa burgers I would have looked at you funny. I didn’t even know what quinoa was until a year ago when I had to eat gluten free for nearly six months. I’ve learned a few tricks along the way and now quinoa is my go-to grain of choice. It’s super easy to cook –nearly fool proof- and comes out perfect every time with very little effort. These burgers are the perfect lunch item or a great recipe to make when you have leftover quinoa.

Ingredients

  • 1/2 cup rinsed quinoa (about 1 1/4 cups cooked)
  • 1 medium carrot, roughly chopped
  • 1/2 onion, minced
  • 1 (15 oz) can white beans, rinsed
  • 1/4 cup bread crumbs
  • 1 egg, beaten
  • 1 tablespoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

    Cook quinoa according to package directions, fluff and set aside.

    In a food processor, add carrots and pulse to mince a few times. Add quinoa, minced onion, white beans, bread crumbs, egg and spices; pulse a few times to combine, but not puree. You want this to be a chunky dough.

    Using your hands, form 4 patties. If it’s too sticky and patties won’t hold, add a bit more bread crumbs. If the patties are not holding, add a little bit of water.

    On a non-stick skillet over medium heat, cook patties through – about 8 to 12 minutes per side.

    Once cooked, assemble burgers with your favorite toppings.

    Here are some tips to cook the perfect quinoa: 1. Rinse the quinoa well. This will help rinse off the protective coating from the plant. 2. Toast the quinoa. You could toast it for a minute or two on a pan to amplify its nutty flavor. 3. Cook in broth. Sure, you can cook the quinoa in water and have it taste ok. However, cooking the quinoa in broth or adding some seasoning to your water will make it delicious. 4. Fluff your quinoa. When the quinoa is done cooking, use a fork to fluff it. To make these burgers, fluff it and let it cool before you make your patties.
