One staple in my refrigerator is ground meat. Whether it’s beef, turkey, pork or chicken, it’s always available for a quick lunch or dinner for my family. Ground chicken in this case is a quick and convenient meal that can even be served on the go during those busy after-school days. They are so easy to serve, you don’t even need silverware.

Ingredients

  • 1 tablespoon grape seed oil
  • 1 lb ground chicken
  • 1/3 cup yellow onion, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon seasoned salt
  • 1 jalapeño, diced
  • 1 Roma tomato, chopped
  • 1/3 cup cilantro, chopped
  • 4 flour tortillas, warmed
  • Salsa, to taste

Directions

    Heat oil in a large skillet over medium heat.

    Add chicken, breaking it apart with a spatula. Cook for 1 minute and add onion and garlic. Season with salt. When onion is tender and chicken is browned, add jalapeño and tomato. Continue cooking for 10 minutes, uncovered. Stir in cilantro and cook for 5 more minutes.

    Spoon a quarter of the mixture in a flour tortilla. Wrap and serve with your favorite salsa.
