Add corn and black beans for an extra touch of flavor. You can also include avocado or mango.

Directions

  • 1 Cook ground meat, season with taco seasoning, salt and pepper (or use leftover meat).
  • 2 Peel plantains, cut in 1 1/2 in thick slices and fry for about 12 minutes on medium-high heat or until golden. Turn half-way through to fry evenly. Remove from pan and mash them with the bacon, garlic, and onion. Form 4 half circles and set aside.
  • 3 Cover the bottom of each bowl with lettuce, tomato and ground meat. Top with mofongo, tomato and cilantro. Serve with tortilla chips.
