Directions

  • 1 Cook the potatoes in water with salt. Set aside.
  • 2 Plunge the tomatoes in hot water for 1 1/2 to 2 minutes. Remove the skin and place in a blender. Add the onions, garlic, Tabasco, oregano and salt and blend until smooth. Transfer the sauce to a pan and simmer to thicken it, about 3 to 5 minutes. Set aside.
  • 3 Brown the meat in a pan, season with your favorite spices and add the potatoes. Stir well to combine all ingredients. Add a little bit of the tomato sauce and stir again.
  • 4 Heat the tortillas and fill with the meat and potato mixture.
  • 5 Serve the tacos with strips of lettuce, avocado slices and rest of the sauce on top.

These tacos are so delicious and easy to make that I like to prepare them frequently. I like serving them with slices of avocado and strips of lettuce to give them a fresh touch. The spice comes from the red sauce prepared with tomatoes, onions, oregano and a bit of Tabasco. Truly delicious!
