Grilled Pizza with Rajas Poblanas

Grilling pizza is one of the best ways to cook an old favorite, especially in that period of the summer when it's too hot to deal with an oven. Today I bring you an easy and delicious recipe for grilled pizza with poblano pepper. "Rajas poblanas", or strips of poblano pepper, are a Mexican dish made by combining poblano pepper, onion, garlic, Mexican cream or sour cream, and cheese. This dish can be served with scrambled eggs, as a taco filling, or with quesadillas. This time I added it to a pizza and it turned out delicious. I used Pillsbury™ Thin Crust Pizza Crust to make the recipe easier, but you can make your own dough if you prefer.

Ingredients

  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 4 tablespoons olive oil
  • 1 white onion, sliced
  • 4 poblano peppers
  • 4 garlic cloves, crushed
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1/4 cup of Mexican cream or sour cream
  • 1/4 cup Monterey Jack cheese, grated

Directions

    To make the rajas: Roast the poblano peppers directly on the burner, making sure to move them constantly so they don't burn. Put them in a plastic bag for 5 minutes.

    Remove from the bag and peel. Carefully trim the tops and remove the seeds. Slice into strips and set aside.

    Heat 2 tablespoons oil in a big frying pan at medium-high heat. Add the onions and poblano peppers. Cook, stirring occasionally, until tender, 7 to 8 minutes.

    Add the garlic and oregano; cook for 1 more minute. Remove from heat and add the cream and cheese. Mix well and season with salt and pepper.

    For the pizza: Brush the dough with remaining olive oil. Put the dough on the grill. Let dough cook for 1 minute per side. Use tongs to lift the dough from time to time to keep it from burning.

    Remove dough from the grill and put the rajas poblanas on top. Serve immediately.
