Pizzas prepared on the grill are truly summer delicacies. I love topping grilled pizza with different meats and sweet and sour ingredients, a winning combination for everyone! And in this particular recipe, the tangy kick of BBQ sauce takes the flavor up a notch. I topped this pizza with pieces of chicken, bacon and mushrooms; however, adding a few plums would no doubt delight guests that like a little more 'sweet' in the balance of sweet and sour flavors. Ingredients

  • 1 large chicken breast
  • 4 bacon slices
  • 1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
  • 3 tablespoons BBQ sauce
  • 1 cup shredded cheese
  • 1/2 cup mushrooms, sliced
  • Salt, to taste
  • Olive oil, to taste

Directions

    Fire up the grill while preparing the other ingredients.

    Boil the chicken in salt water. Once fully cooked, shred and set aside.

    In a frying pan, pre-cook the bacon and dice.

    Unroll the pizza dough on a floured surface. Spread out the dough, cover with a layer of BBQ sauce and shredded cheese. Top with the shredded chicken, mushrooms and bacon. Add salt, to taste.

    Coat the grill rack with olive oil, so the crust doesn't stick while cooking, and set the pizza on the rack. Place over heat and grill until the cheese has melted.

    Serve immediately.

    For a different taste, use other meats like chorizo or Canadian ham. Sprinkle with pieces of plum to give this recipe an exquisite, slightly sweet-and-sour flavor.
