Grapefruit is a citric fruit from Asia, and it's commonly paired with sweet flavors to counteract the fruit's acidity. It also makes a welcome addition in juices and salads. I love to eat it by itself or with a little honey. I recently tried a tasty dessert in one of my favorite restaurants, which incorporated seasonal fruits such as grapefruit. This grapefruit compote is delightfully creamy and sweet, making it a perfect guilt-free, sweet treat. My craving for seconds was irresistible, so I decided to make my own dessert cup at home.

Ingredients

  • 1/2 cup water
  • 1/2 cup honey
  • Fine strips of ginger, to taste
  • 2 teaspoons grapefruit zest
  • 1 pink grapefruit, peeled and cut in slices
  • 1 cup Yoplait® Greek 100 plain yogurt
  • 2 tablespoons honey
  • 1/4 cup Fiber One™ Original bran Cereal
  • 1/2 teaspoon ground cinnamon

Directions

    In a small frying pan over high heat, mix the water with the 1/2 cup honey, ginger and grapefruit zest, stirring constantly until the honey melts. Remove from heat. Add the slices of peeled grapefruit to the juice.

    In a separate bowl, stir the yogurt with 2 tablespoons honey, cereal and cinnamon. Serve in tall glasses, creating a bottom layer with the fruit mix, and topping off each cup with the yogurt mix.

    Enjoy chilled.
