Grape and Almond Gazpacho

Not in the mood for a salad? No problem. You can make a gazpacho and drink your veggies instead, making your healthy eating habits new and refreshing. This cold summer soup is full-flavored and wholesome at the same time, a combination that is increasingly hard to find in our modern diet. Originally from the southern region of Andalucia, in Spain, this famous dish is now prepared around the world and in many different variations. This one, for example, has grapes and almonds as its main ingredients, and has a very mild, slightly sweet taste. Other versions include avocado, watermelon, or the original, full of fresh tomatoes.

Ingredients

  • 2 cups organic, seedless green grapes
  • 2 celery sticks
  • 1 yellow squash
  • 1/2 cup peeled almonds
  • 1-2 small potatoes, cooked and peeled
  • 2 tablespoons chopped onion
  • 1 teaspoon red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 1/4 – 1/2 cup vegetable broth

Directions

    Juice the grapes, squash, and celery sticks. Transfer the juice to the blender.

    Add all the other ingredients, and blend until smooth. If it’s not creamy enough, add another potato. If it’s too creamy, add more stock.

    You can serve it at room temperature, or chill in the refrigerator. Blend before serving, to soften it if it solidifies a bit in the fridge.

    Serve in small soup bowls, or cups, and decorate with grapes and parsley.

    If you’re in the mood for something fun, add 2 tablespoons white wine to the blender.
