Spectacular Fruit Gelatin

Blanca Arroyo My father was a very clever man, a lover of the art of good eating and fine dining. And I think I inherited my passion for cooking from him. One thing I really liked about Don Elías, as everyone called him, was his ability to come up with fun recipes that involved the whole family, since I come from a family of 6 siblings. Food and its preparation have always been, were and still are a reason to get together and spend time with my family. And this gelatin is an example of that, plus it’s filled with fruit. I’m sure your kids will be happy to help you make it and even more excited about gobbling it up as soon as they get their hands on it. So let’s get to it!

Ingredients

  • 1 watermelon (about 12 lb), seedless and cut in half lengthwise
  • 9 boxes (3 oz) watermelon gelatin
  • 4 packets (1 oz ) unflavored gelatin
  • 2 cups fresh strawberries, cut into halves
  • 2 cups blueberries
  • 2 cups raspberries

Directions

    Use an ice-cream scoop to remove all the pulp from the watermelon. Try to take out the entire red portion. Do so carefully so you don’t break the rind.

    Prepare the watermelon flavored gelatin according to package directions. Stir well and add the unflavored gelatin. Mix and let cool for 5 minutes.

    Place half the gelatin in the watermelon. Let cool for 10 minutes.

    In large bowl, combine the fruit well.

    Divide the fruit into two equal parts. Add to the watermelons, evenly distributing it, and then add the rest of the gelatin.

    Refrigerate for about 4 hours or until it sets completely.

Expert Tips

  • tip 1
    Do not use the following fresh or frozen fruits, as they won’t allow the gelatin to set: pineapple, watermelon, mango, guava, figs, papaya, kiwi or ginger.
  • tip 2
    Instead of using watermelon, you can make molds with oranges, grapefruits or cantaloupe.
