Expert Tips

If you would like it spicy, experiment by adding a variety of chili peppers.

We love the summer months because it means gazpacho! Gazpacho is a Spanish soup made with raw vegetables and served cold. There are so many ways of making this chilled soup, but this traditional recipe won't disappoint. Use it as the base for your wedding appetizer ideas, informal parties or family dinners. These gazpacho shooters can even be served as wedding hors d'oeuvres!

Directions

  • 1 Roughly chop all ingredients before placing in a food processor. Process for 1-15 seconds, or until you no longer see large chunks. Be careful not to over process.
  • 2 Transfer to a mixing bowl and stir to incorporate all the flavors. Cover and chill for 2 hours.
