We love the summer months because it means gazpacho! Gazpacho is a Spanish soup made with raw vegetables and served cold. There are so many ways of making this chilled soup, but this traditional recipe won't disappoint. Use it as the base for your wedding appetizer ideas, informal parties or family dinners. These gazpacho shooters can even be served as wedding hors d'oeuvres!

Ingredients

  • 4 cups tomato juice
  • 2 cups Muir Glen™ organic diced tomatoes
  • 1 cucumber
  • 1/2 cup chopped red onion
  • 1 green bell pepper
  • 2 garlic cloves
  • 2 green onions
  • 1 lime, juiced
  • 1 tablespoon red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried basil
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Directions

    Roughly chop all ingredients before placing in a food processor. Process for 1-15 seconds, or until you no longer see large chunks. Be careful not to over process.

    Transfer to a mixing bowl and stir to incorporate all the flavors. Cover and chill for 2 hours.
