A frittata is a kind of traditional Italian omelet that's very similar to the Spanish omelet that's made with potatoes. Both are made in a frying pan or in the oven. The difference is that with the frittata the ingredients are added over the omelet once it’s almost finished so it looks like a pizza. On the other hand, in a typical Spanish potato omelet, all the ingredients are combined. This recipe is perfect for a brunch and pairs great with avocado, tomato, wheat tortillas or toast.
