At the beginning of the year we're usually a bit more conscientious of our financial and physical well being, and these topics are often focal to our end-of-year resolutions. We don't need to invest a lot of time or deny ourselves delicious food to reach our goals. There are many dishes that only need a few ingredients to create something mouthwatering, like this tasty fresh pasta salad. This is a recipe I learned when I was very young and can be adapted to any budget and time since we can add and omit ingredients however we like. If time is the issue, try it with a delicious homemade pesto.

Ingredients

  • 1 cup whole wheat pasta bows or spirals
  • 1 small jar roasted red peppers, finely chopped
  • 1 jar of basil pesto of your preference
  • 1 cup fresh arugula
  • Mozzarella cheese, shredded

Directions

  • 1
    Cook the pasta as per their instructions.

    Once ready, let cool for a few minutes and mix with the rest of the ingredients.

    Serve immediately or refrigerate in a sealed dish for up to 2 days.
