Ingredients

  • 8 oz uncooked fettuccine
  • 2 tablespoons butter
  • 1 lb medium shrimp, peeled and deveined
  • 1 tablespoon fresh garlic, finely minced
  • 1/2 onion, sliced
  • 1/4 cup white cooking wine
  • 1 teaspoon ground dry red chili
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 package (6 oz) fresh spinach

Directions

    Cook pasta according to package instructions. Drain well, set aside and keep warm.

    Melt butter in large non-stick skillet over medium heat. Add shrimp, onion, garlic, white wine and red chili; cook for 5 minutes more or until the shrimp is cooked and the onion is translucent, stirring occasionally.

    Add cooked pasta, lemon juice, salt, black pepper. Stir in half of spinach package and cook for 3 minutes or until spinach starts to wilt, stirring to blend.

    Serve immediately over a bed of remaining fresh spinach.
