I find it easier to prepare a simple lunch for one than an entire dish that only I will get to enjoy, especially because I usually eat lunch alone. I prefer to eat something warm and fresh out of the oven. These very simple flat bread pizzas are ready in just minutes. You can create your own or enjoy my favorite toppings: arugula, tomato, and prosciutto.

Ingredients

  • 1 naan bread
  • 5 oz goat cheese
  • 1 Campari tomato, sliced
  • 2 slices prosciutto, sliced into squares
  • 1/2 cup arugula

Directions

  • 1
    Preheat oven to 400°F. Place Naan bread on baking sheet or pizza pan and bake for 10 minutes.
  • 2
    Remove from oven. Spread goat cheese on Naan bread. Top with tomato slices, prosciutto and half of the arugula. Place in oven for 5 minutes.

    Remove from heat and top with remaining arugula. Serve immediately.

    You can add sliced Serrano chiles for a spicy pizza.
