Portobello Steaks with Winter Vegetables

I must confess I love mushrooms! It doesn’t matter how they’re prepared, I will always say yes to anything that has mushrooms. This recipe is made with Portobello steaks and winter vegetables and it’s one of my favorite dishes with mushrooms, because it’s so easy to make, it’s quick and the marinade makes these irresistible. I hope you enjoy them!

Ingredients

Marinade

  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 - 4 garlic cloves, mashed
  • 1/4 cup Worcestershire sauce
  • 1/4 cup olive oil

Rest of the ingredients

  • 4 large Portobello mushrooms, cleaned and stemless
  • 2 tablespoons fresh parsley, finely cut
  • 2 - 3 cups winter vegetables, cooked

Directions

    In a bowl or in a large airtight plastic bag, combine all of the ingredients for the marinade. Mix well. Add the mushrooms and marinade them for 10 to 15 minutes.

    Heat up a non-stick pan over medium-high heat.

    Remove the mushrooms from the marinade. Cook in a heated pan until soft and golden, about 4 minutes on each side. Meanwhile, add some of the marinade while they cook if you want to infuse more flavor into this delicious dish.

    Garnish with hot mushrooms and parsley, if you’d like, and serve them with winter vegetables.

    For a spicy kick, replace the black pepper for cayenne pepper.
