Ingredients

  • 1 tablespoon butter
  • 1 lb cod or swordfish fillets
  • 1/2 cup finely chopped onion (1 medium)
  • 4 cloves garlic, finely chopped
  • 2/3 cup tequila
  • 1/2 cup fresh lime juice
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup finely chopped fresh cilantro
  • 8 oz hot cooked linguine
  • 1 tablespoon grated lime peel

Directions

    In 12-inch skillet, melt butter over medium-high heat until hot. Cook fillets in butter 2 minutes on each side. Cover; cook 2 to 4 minutes longer or until fish flakes easily with fork. Remove from skillet; keep warm.

    Add onion and garlic to skillet; cook and stir about 1 minute or until tender. Add tequila to skillet; cook about 2 minutes or until tequila is reduced. Stir in lime juice, pepper flakes and cilantro. Add fish; cook over medium heat about 4 minutes to blend flavors.

    Place hot cooked linguine on large serving platter; top with fish mixture. Sprinkle with lime peel.
