Fiery Pork Tenderloin with Pineapple Salsa

Ingredients

Pork

  • 2 teaspoons canola or soybean oil
  • 2 pork tenderloins (3/4 lb each)
  • 1 teaspoon black pepper
  • 1/4 to 1/2 teaspoon ground red pepper (cayenne)
  • 1/2 teaspoon salt

Pineapple Salsa

  • 1 can (8 oz) pineapple tidbits, drained
  • 4 medium green onions, sliced (1/4 cup)
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons chopped fresh or 2 teaspoons dried mint leaves
  • 1/2 teaspoon grated lime peel
  • 2 teaspoons lime juice
  • 1/4 teaspoon salt

Directions

    Brush grill rack with oil. Heat coals or gas grill for direct heat. Rub 1 teaspoon oil onto each pork tenderloin; sprinkle with peppers and 1/2 teaspoon salt.

    Cover and grill pork over medium heat 20 to 30 minutes, turning 3 times, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.

    Meanwhile, in medium bowl, mix all salsa ingredients. Cut pork into 1/2-inch slices. Serve with salsa.
