Falafel with Yogurt Sauce

I can remember how excited I felt whenever my school friends had a birthday coming up because it meant that we would have a party. One of my best school friends was Lebanese and she always celebrated at home with her mom who was in charge of the menu. She always had my favorite flavors among the other tasty appetizers like falafel with delicious yogurt sauce. I still enjoy them just as much as before, but now I know how to make them for whenever I have the craving without having to wait for anyone's birthday.

Ingredients

  • 14 ozs chickpeas (leave to soak overnight before preparation)
  • 1/2 onion, chopped finely
  • Finely chopped fresh parsley
  • 2 garlic cloves, minced
  • 1 tablespoon coriander powder
  • 2 tablespoons ground cumin
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon yeast
  • 1/2 pepper (or a whole depending on how spicy you want)
  • Oil
  • Bread crumbs
  • Water
  • Baking soda (optional)

For the sauce

  • 6 ozs plain yogurt
  • 2 tablespoons olive oil
  • 1 garlic clove, finely chopped
  • Juice of one lime
  • 1/2 tablespoon of pepper and salt
  • Finely chopped parsley

Directions

    Strain the chickpeas and transfer into a deep bowl. Add the onion, parsley, cilantro powder, a bit of water and the garlic. Use a blender to mix well and create dough.

    Once everything has mixed well, add the cumin, pepper, yeast, pepper and a bit of baking soda. Blend once again.

    Add the shredded bread to absorb the water a bit and mix to achieve the desired consistency. Use your hands to mold the falafels.

    Let sit in the fridge for about 30 minutes. One this time has past, fry in a deep pan with enough oil. Serve with tasty yogurt sauce.

    To make the sauce just mix all the ingredients together until well combined and refrigerate.

    Add one tablespoon of cumin to the sauce to give it more intense flavor.
