Ingredients

  • 1 lb pasta
  • 1/2 cup olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper, to taste
  • 3 cloves garlic, finely chopped
  • 1/2 cup basil, julienned
  • 10 ozs cherry tomatoes
  • 1 lb brie cheese, cubed

Directions

    Cook the pasta according to package instructions.

    While the pasta cooks, add olive oil, red wine vinegar, salt and pepper to a serving bowl and whisk well. Add the garlic and basil and allow to marinate (the longer the better).

    When done, add warm pasta and fold in the tomato and brie. The heat will slightly melt the cheese and create a sauce. Serve immediately.
