Creamy Cranberry Salad

The holidays are upon us and I find myself busy in preparation for a festive feast. As I write out the menu for my holiday table, I can not forget about my creamy cranberry salad. I just can’t picture Thanksgiving or Christmas without it! I remember the first time I watched someone make this salad; I was amazed about how incredibly easy it is to make. Prepare it this holiday season and delight your guests!

Ingredients

  • 3/4 cup water
  • 1 cup sugar
  • 4 cups fresh cranberries
  • 1 cup crushed pineapple
  • 1 tablespoon unflavored gelatin powder
  • 1/2 cup chopped pecans
  • 3 cups whipped cream

Directions

  • 1
    In a sauce pan over medium heat, add water and sugar. Mix to dissolve.

    Add in cranberries, crushed pineapple and unflavored gelatin powder. Bring to a boil. Let mixture boil until you start to hear cranberries pop. Using a potato masher, smash cranberries.

    Remove from heat and pour into a bowl to cool for 4 hours in the fridge.

    Mix in pecans and whipped cream.

    Place back into the fridge overnight and serve.
