Expert Tips

This salad can also be made with tuna or crabmeat.

Directions

  • 1 In a bowl, combine all ingredients except endive leaves.
  • 2 To serve, add 1 tablespoon of the shrimp salad to each endive leaf, top with chopped cilantro.
  • 3 Serve and enjoy!

Endives are a white leafy vegetable that you can eat raw or cooked. I prefer it raw in a salad. Another way that I like to serve it is as an appetizer: each leaf stuffed with tuna salad, chicken salad, fruits or shrimp. It’s also great for parties with a little hummus or guacamole. Today’s recipe is an endive with shrimp salad. Try it out!
