Endives are a white leafy vegetable that you can eat raw or cooked. I prefer it raw in a salad. Another way that I like to serve it is as an appetizer: each leaf stuffed with tuna salad, chicken salad, fruits or shrimp.
It’s also great for parties with a little hummus or guacamole.
