You can also fry the sticks.

If you have any leftovers, freeze them and reheat in oven before serving.

Directions

  • 1 Preheat oven to 425°F.
  • 2 Lightly coat a pan with oil and set aside.
  • 3 Combine dry ingredients in a bowl, except bread crumbs and spices, stirring well.
  • 4 Combine all wet ingredients in a separate bowl, stirring well.
  • 5 Use a third bowl to combine bread crumbs, oregano and basil.
  • 6 Coat eggplant sticks in flour, then in the egg and milk mixture, and finally in the bread crumbs.
  • 7 Place eggplant sticks on the baking pan, don't stack them.
  • 8 Bake for 15 minutes, flip and bake for another 10-15 minutes or until golden.
  • 9 Season with salt and pepper, serve immediately with sauce of your choice.

And they are perfect to get the kids to eat their vegetables in a delicious, wholesome, easy way. You can easily make these sticks in the fryer but I chose to bake them for a lighter version that's equally delicious.
