Whether you grew up loving eggnog or fell in love with it when you reached the States like me, this low calorie eggnog version still packs all the taste, but with a lot less guilt. If you want to watch your caloric intake this holiday season, I’ve prepared this recipe especially for you!

Ingredients

  • 2 cups of low fat or skim milk
  • 1 cup of coconut milk
  • 2 lime or lemon rinds
  • 1 vanilla pod, cut in half lengthwise
  • 2 eggs
  • 1 egg yolk
  • 1 teaspoon cornstarch
  • Rum or Bourbon, to taste (optional)
  • Freshly ground powdered nutmeg
  • Powdered cinnamon (optional)
  • Unsweetened shredded coconut, for garnish (optional)

Directions

    In a small pot combine 1-1/2 cups of milk with the lime or lemon rinds over high heat.

    Remove the vanilla seeds and add them to the milk with the vanilla pod.

    Bring the milk to a low boil.
  • 4
    In the meantime, beat the eggs and yolk in a bowl with the cornstarch and sugar until you reach a shiny and yellowish mixture.

    Little by little, add the milk to the eggs while constantly mixing. Put back on the oven (still stirring with a wooden spoon) until the mixture thickens – 8 to 10 minutes.

    Remove from the heat and add the rest of the milk immediately.

    Pour into a large punch bowl and let cool before serving.

    Remove the lime or lemon rinds and the vanilla pod. Add the rum or alcohol of your choosing (if you like). Serve in mugs or glasses with cinnamon or nutmeg on top. Cheers and happy holidays!

    Pour the milk into the eggs little by little to avoid cooking them.

    Use a wooden spoon instead of plastic, silicon, or metal because it will resist heat better without altering the chemical balance of your recipe.
