It’s apple season and we took the kids to the orchard to pick some fresh ones recently. As you can imagine, I ended up with more apples than I knew what to do with so I put my creativity to work. The combination of apples and eggs sounded a little strange to me at first, but it was delicious. I invite you to experiment and get the most out of this delicious fruit!

Ingredients

  • 1 teaspoon olive oil
  • 1/2 cup red onion, cut into thin strips
  • 1/2 cup red pepper, diced
  • 1 cup green apple, peeled and cut into squares of equal size
  • 1 teaspoon Dijon mustard
  • 1 teaspoon of sour cream
  • 1 teaspoon parsley, finely chopped
  • 8 slices of bread with raisins and walnuts
  • 2 cups cheddar cheese, grated
  • 4 hard boiled eggs, chopped into slices

Directions

    Heat the oil in a medium pan over medium high heat. Add the onions and sauté for 3-5 minutes or until they’re soft and lightly browned. Add the pepper and continue to sauté until the peppers are tender. Add the apples, mustard, sour cream and parsley, mix and remove from the heat. Cover the mixture to keep it warm.

    Set the oven to broil. Place the rack in the center.

    Place the bread on a baking dish lined with parchment paper. Place in the oven for 2-3 minutes. Remove from the oven, set aside 4 slices and sprinkle the shredded cheese over the other 4 slices. Place them back in the oven for 2 more minutes to let the cheese melt. Remove from the oven.

    Cover the slices of bread with the melted cheese with a layer of egg and then a layer of onion with apple to taste. Cover with the other slice of bread and serve immediately.

    If you don’t have bread with nuts and raisins, you can use any bread you prefer.
