Easter Cupcakes

These cupcakes are a very nice project to work on with your little ones at home. They’ll enjoy topping the cupcakes with Easter eggs or decorations. Plus, they’ll have lots of fun eating them!

Ingredients

  • 2/3 cup butter, at room temperature
  • 1/2 cup powdered sugar
  • 1 tablespoon honey
  • 2 eggs
  • 2/3 cup finely grated coconut
  • 1/2 cup milk
  • 3 tablespoons coconut milk
  • 1 cup sifted flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Frosting:

  • 1 cup softened butter
  • 1 cup powdered sugar, sifted
  • 2 to 3 tablespoons milk
  • 1 teaspoon vanilla

Garnish:

  • 1 cup grated coconut
  • Chocolate eggs
  • Marzipan eggs

Directions

    Combine butter, powdered sugar and honey until it’s very creamy and homogeneous.

    Add eggs one by one, beating well after each egg.

    Combine grated coconut with the milks and add to butter mixture.

    Mixing by hand and with a spatula, stir to combine the mixed and sifted flour with the baking powder and salt.

    Pour into cupcake molds lined with cupcake liners. Bake at 350°F for about 25 minutes, or until you can insert a toothpick or the tip of a knife and it comes out clean and warm.

    Let cupcakes cool on oven or cookie rack and unmold. Let cool completely in order to garnish cupcakes.

    Frosting: Use a mixer to beat butter until it is very creamy. Add the well-sifted powdered sugar, and mix in slowly until incorporated. Add tablespoons of milk, one at a time, so mixture glides on smoothly. Lastly, add vanilla.

    Once it’s ready, use a spatula to spread frosting on surface of cupcake.

    Garnish: Top frosting with grated coconut. Use a spoon to make a hole in the center. You can place the chocolate and marzipan eggs there to make it look like a nest.

Expert Tips

    Instead of eggs, you can use bunny- and chick-shaped cookies to decorate. They will look very cute on the cupcakes.

    If desired, use lightly toasted coconut to give it an extra touch of color.

    You can add some sugar daisies, if you wish.
