Expert Tips

If you like coconut but can't find coconut ice cream, use vanilla ice cream and add 1/4 teaspoon coconut extract to the juice mixture.

Endless varieties of fruit juice blends are available on supermarket shelves. The tropical blends usually include flavors of pineapple, banana, mango, coconut and papaya.

Directions

  • 1 In food processor or blender, place coconut. Cover; process until coconut is in small pieces. Place coconut in shallow dish. Dip rims of six 12-oz stemmed glasses into water, then dip into coconut to coat. Chill glasses in freezer at least 1 hour before serving.
  • 2 In blender, place tropical juice blend, sugar, lime juice and ice cubes. Cover; blend on high speed about 45 seconds or until smooth. Pour mixture into glasses.
  • 3 Pour 1/4 cup club soda into juice mixture in each glass. Add 1 large scoop ice cream to each glass. Garnish with remaining coconut if desired.
