You can dice a part of the dragon fruit and add to the mix (without blending it) for more texture.

I’ve always loved the deep red color of Central American dragon fruits. Then I discovered the Peruvian version, which has a transparent pulp but the same dark little seeds as the other variety. Both have the same taste, and no matter which variety you choose, you can use this fruit to make exquisite, exotic and unique popsicles.

You can replace the golden berries with other fruits like yellow raspberries.

Directions

  • 1 Cut the dragon fruits in half and remove the pulp with a spoon. Mix it in a blender with lemon juice, sugar and 2 cups of water. Process it lightly until you reach a smooth consistency (without destroying the seeds.)
  • 2 Pour the mix in 8 popsicle molds and freeze.
  • 3 Cut the golden berries in half and add in the molds, combining it with the dragon fruit mix. Insert the sticks once the liquid solidifies. Freeze until completely firm.
  • 4 Remove from the mold and serve immediately.
