Ditalini Pasta with Avocado and Tomatoes

Ingredients

  • 6 oz uncooked ditalini (short tubes) pasta (1 1/2 cups)
  • 4 large avocados, halved, pitted
  • 1 tablespoon lemon juice
  • 2 cloves garlic, finely chopped
  • 2 tablespoons olive or vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup chopped fresh basil leaves
  • 1 cup halved yellow cherry tomatoes
  • 1 cup halved red cherry tomatoes
  • Asiago cheese curls, if desired

Directions

    Cook and drain pasta as directed on package. Cool; set aside.
  • 2
    Scoop out all but 1/4 inch along edges of avocado halves. Brush exposed surface of avocados with lemon juice; cut remaining avocado into cubes.

    In large bowl, toss garlic with oil, salt and pepper; stir in basil, cubed avocado and tomatoes. Toss with pasta. Spoon into avocado halves. Top with Asiago curls, if desired.
