Cucumber, Radish and Yogurt Dip

Among the wide variety of edible plants, the spicy radish is among my favorites Commonly seen in salads, radishes can also be used in hot dishes or combined in dips. The radish’s special flavor makes it almost exotic, with a natural spice that heats and makes your mouth tingle. I usually keep some radishes in my refrigerator and one day, it occurred to me to create a recipe based on the famous tzatziki sauce with cucumber, yogurt and radish added. In the end, this has turned out to be a wonderful new dish, ideal for accompanying cold-cuts, raw vegetables like celery and carrots or steamed seafood. This is a new twist on the traditional dip that can be made quickly with just a few ingredients.

Ingredients

  • 3.5 ozs spicy radish, peeled and grated
  • 1/2 whole seedless cucumber, finely chopped
  • 1 1/2 cup Yoplait natural yogurt
  • 1 tablespoon white sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • Pinch of salt
  • 1 tablespoon fresh dill, chopped

Directions

    Start by washing and peeling the vegetables. Next, grate the radishes and set aside. Cut the cucumber in half and remove the seeds with a spoon (if using a normal cucumber variety.) Chop into small pieces.

    In a small mixing bowl, combine all the ingredients together with a wooden spoon or spatula. Once mixed, season with salt and fresh dill as desired.

    Transfer to a small dish before serving, or refrigerate if not consumed immediately.

    Use a vegetable peeler to peel the cucumber from end to end.

    If you don't have any yogurt on hand, sour cream can be used instead.
